SUBJ: Sanitary Evaluation of Mission Inn Dining Hall

1. The USMTM Dining Facility (Mission Inn) received a marginal sanitation rating from Capt Walker, TSgt Lecroy, and AlC Litvak on 10 Sep 90 due to less than satisfactory public health standards. The major repeat discrepancies were thawing of frozen meats at room temperature, inadequate facilities for washing pots and pans, and unsanitary floors due to excessive water and food accumulations.
2. The Mission Inn Dining Hall has surpassed its capacity to safely feed patrons since increasing the number of meals served from fewer than 75 to over 700 per meal since mid August. The facility has limited food preparation area, inadequate refrigeration space and inadequate two compartment sinks for cleaning large numbers of pots, pans and dishes. This severely compromises their ability to prevent a foodborne disease outbreak.
3. Recommend that a limit on the number of meals served be established to reduce the probability of a foodborne disease outbreak. Additionally, it is recommended that the plumbing
in both sinks be repaired to prevent the water leakage, unsanitary hygienic conditions and a safety hazard.
